Number of Servings: 9


    2 lb Ground Chicken
    1 Onion
    1 tsp. Olive Oil
    4 (15.5 oz) cans White Kidney Beans
    2 1/2 Cups Reduced Sodium Chicken Broth
    2 (4 oz) cans Diced Green Chilies
    16 oz Frozen Yellow Corn
    1 Lime
    4 tsp. Salt
    3 tsp. Ground Cumin
    3 tsp. Chili Powder
    3 tsp. Cayenne Pepper
    3 tsp. of your Favorite Hot Sauce
    Reduced Fat Cheese to sprinkle on top of bowl.


In large saucepan heat olive oil. Cook chicken and chopped onion until chicken is no longer pink (5-7min).

Add Spices, Hot Sauce and Garlic, simmer 1-2 min.

Add Beans and Chicken Broth, simmer 25 min.

Add Corn and Green Chilies , simmer 5 min,

Before serving stir in Lime Juice

Sprinkle cheese (about 1 oz) on top of each bowl of chili.
