    2 cups cooked pumpkin, canned (not pie filling)
    1/2 cup egg beaters or egg whites
    1 1/2 cup skim milk
    12 tsp splenda
    1/2 tsp salt
    1 tsp pumpkin pie spice


Beat all ingredients together until smooth.
Spray a pie pan with non-stick cooking spray
Bake at 400 degrees for 15 minutes, then lower oven to 375 and bake for 45 minutes, until a knife inserted in the pie comes out clean.

Makes 8 servings. Can be sliced and frozen.
