Introduction

The original recipe did not include ground turkey but my husband is still under the impression that a meal is not complete without MEAT so here is updated version. Feel free to add or delete the turkey, use beef or whatever you desire. Tastes great either way. Ingredients

    1 tbsp. oil
    1/2 c. chopped onion
    1/3 c. chopped green peppe
    1 can black beans, drained
    1 can kidny beans, drained
    8 oz. tomato sauce
    1 pkt taco seasoning mix
    1 c. cornmeal
    2 tbsp. sugar
    1/3 c. milk
    1 egg, slightly beaten
    2 tbsp. oil
    1 c. corn kernals

Directions

1. Heat oven to 350 degrees.

2. Heat oil in skillet over medium heat. Add onion and green pepper. Cook, stirring occasionally for 2-3 minutes. Stir in beans, tomato sauce, and seasoning. Set aside.

3. In a medium bowl, combin cornmeal, and sugar. Stir in milk, egg, and remaining oil. Add corn. Press mixture on the bottom and side of a greased 9" pie pan.

4. Spoon bean mixture into cornmeal crust. Bake for 20-30 minutes. Remove from oven, sprinkle with cheese (optional). Continue baking for 2-5 minutes (until cheese melts). Remove from oven and serve with salsa (if desired).
