    1 tsp Olive Oil
    1 TBS I Can't Believe It's Not Butter (stick)
    3 cup Leeks - cut in match sticks
    2 cloves Garlic - Medium - diced
    3 Cup Beef broth (97% Fat Free), bouillon,
    beef soup base, or Au Jus flavoring
    (American Spice Co.)
    1/8 tsp Worcestershire Sauce
    1/3 cup Kroger Mozzarella Fat Free Shredded


Shuck the garlic, and smash and then dice the garlic.

To prepare Leeks, run cold water into sink- cut the white bulb end trom greens and slit bulb drop in water to soak and clean. Rinse the remaining green tops- gather together in stacks- lining up the ribs. Hold each stack and slit lengthwise into long narrow strips, then cut in about 1/2" - 3/4" pieces. Drain the bulb sections and again slit lengthwise and then cut into pieces.

In saucepan warm/melt the oilive oil and I butter substitute over moderate heat. Add the garlic to the saucepan and let them soften slowly, about 1 minute. Then add the leeks, and stir to coat, let them simmer for about 3 minutes stirring once or twice.

Add your 3 Cups of liquid broth, or 3 cups water with the appropriate bouillon, soup base or other beefy type flavoring. My favorite is the powdered Au Jus flavor soup base. Then just a splash of Worcesstershire Sauce.

Simmer about 4-5 minutes just till flavors blend and leeks are soft. Season with salt and pepper if desired.

Ladel into bowls and sprinkle with the Fat Free Mozarella cheese.
