Introduction

Ingredients

    1 lb. fettuccini pasta, cooked
    2 16 oz. pkg. shredded italian cheese (mozzerella, asiago, and parmesan)
    3 c. 2% milk
    4 tbsp. unbleached white flour
    3-4 garlic cloves, minced
    10-15 fresh basil leaves, chopped
    2-3 c. fresh spinach
    olive oil
    1 pkg tofu cutlets, diced

Directions

Cook fettuccini according to package directions. Saute garlic in olive oil add tofu, spinach, basil, and flour. Slowly add milk more milk may be added as needed. Add 1 package cheese, stir until melted. Pour sauce over noodles, mix together then top with other package cheese. Serves 9
