    1 lb extra lean ground beef
    1 medium onion, chopped
    3 cloves garlic, pressed
    12 fajita size flour tortillas
    1 can no fat refried beans
    2 cans enchilada sauce
    2 cups shredded 2% cheddar cheese


Brown the ground beef, onion and garlic. Drain liquid. Add 1/2 cup enchilada sauce and mix well. For each enchilada, spread about 1 1/2 tablespoons refried beans onto tortilla and add about 3 tablespoons of beef mixture. Roll up starting with side without the refried beans, press bean side firmly to seal and place seam side down into 9x13 baking dish sprayed with cooking spray. Pour remaining sauce over enchiladas, cover pan with foil, and bake at 350 degrees Fahrenheit for 20-25 minutes or until hot. Sprinkle the cheese over the top and wait 3-5 minutes or until melted. Makes 12 single enchilada servings.
