Number of Servings: 4


    1 block extra firm tofu, cubed
    1/2 a sweet potato, cubed
    1/2 butternut squash, cubed
    onion, chopped
    2 carrots, chopped
    3 Tablespoons Extra Virgin Olive Oil
    1 Tablespoon Garam Masala
    1 teaspoon salt
    1 teaspoon pepper
    3 Tablespoons grapefruit juice


Preheat oven to 350 degrees

Cut all ingredients into equally sized pieces, place them in a baking dish

Drizzle the olive oil over the vegetables, sprinkle salt and pepper and garam masala. Toss to coat.

Place in oven, with foil covering. Roast for 60 minutes.
Take foil off and add 3 Tablespoons Grapefruit Juice over the vegetables.
Cook 15 more minutes.
Salt to taste. Enjoy.
