Introduction

A quick and simple use for leftover roast beef and gravy. A quick and simple use for leftover roast beef and gravy.
Number of Servings: 4

Ingredients

    1 tsp - Becel Light Margarine
    2 cloves - garlic, finely chopped
    2 - green onions, chopped
    1/2 cupo - celery, chopped
    1/2 cup - chopped carrots
    6 medium - mushrooms, sliced
    1/4 cup - green pepper strips, cut in half
    3/4 cup - Left-over gravy
    12 oz leftover roast beef
    1 - parsnip chopped

Directions

In a stir fry pan, add margarine and heat. Add all cut up vegetables and saute until soft. Add beef and continue stir-frying. Add gravy and mix in with beef and vegetables. In the meantime cook noodles according to package (al dente). Serve beef mixture over noodles, rice, spaghetti squash or whatever you wish. Noodles not included in calorie count.

Makes 4 - 1 cup servings.
