    5 small to medium baked potatoes
    .75 cup of lite sour cream
    1 whole bulb of garlic
    .25 cup of reduced sodium chicken broth
    .25 cup of grated parmesan cheese
    Salt and pepper to taste


Poke potatoes with fork and place on baking sheet*. Cut the top quarter off of the garlic so that most of the cloves are exposed, wrap garlic in foil and bake with potatoes at 425 for 50-60 minutes.

*Tip - Rub potato skins with a small amount of olive oil and sprinkle with salt for a crunchy and delicious skin. (not in calculation)

Remove from oven allow to cool, 15 minutes, then halve potatoes and scoop out most of the flesh into a mixing bowl leaving a thin layer on the potato skin.

Sqeeze roasted garlic into potatoes, add chicken broth, sour cream, salt and pepper (if desired). Mix well then return mixture to potato skins. Top with grated parmesan and sprinkle with paprika to taste. Bake at 350 for 20-30 minutes or until desired doneness is reached.
