Ingredients

    1/2 cup cooked, mashed fresh or canned pumpkin
    1/2 cup egg subsitute
    1/4 cup plain nonfat yogurt
    1/4 cup unsweetened applesauce
    1 1/4 cup yellow cornmeal
    3/4 cup oatmeal
    1/3 cup granulated Splenda
    2 tsp baking powder
    1/2 tsp salt

Directions

Preheat oven to 400. Lightly oil or spray 12 muffin tins.

In large bowl, combine pumpkin, egg substitute, yogurt, and applesauce.

In separate bowl, combine all of the remaining dry ingredients.
Add this to the liquid ingredients, stirring just to combine. (Do not over stir or beat).

Spoon the batter into the prepared muffin tins and bake for 20-25 minutes

    Not bad. Not quite a muffin though, more like cakey biscuit. I used light sour cream instead of yogurt but i don't think that would make a difference. It does require some spices, I can't do pumpkin without cinnamon and cloves(but thats just me) - 5/27/10
