    Pie Crust:
    1 cup sifted, all-purpose flour
    2 tbsp icing suger (confectioners sugar)
    3 tbsp unsalted butter, well chilled and cut into pieces
    2.5 tbsp shortening, well chilled and cut into pieces
    About 3 tbsp ice water

    1 cup light corn syrup
    1 cup firmly packed brown sugar
    3 eggs, slightly beaten
    1/3 cup butter, melted
    1/2 tsp salt
    1 tsp vanilla extract
    1 heaping cup pecan halves


Combine the flour and icing sugar in a bowl. Cut in the butter and shortening with a pastry blender until the mixture resembles oatmeal flakes. Gradually add the water, mixing just until the dough holds together.

Transfer the dough to a lightly floured surface. Using the heel of your hand, smear 1/4 cup of dough at a time across the surface to form a 6 inch long strip. Gather the dough together and repeat two more times. Gather the dough together, flatten it to form a disk. Wrap the dough with plastic wrap and refrigerate it at least 1 hour.

Preheat oven to 350F.

In a large bowl, combine corn syrup, sugar, eggs, butter, salt, and vanilla. Mix well.

Line greased pie dish with crust dough. Pour syrup mixture into crust. Sprinkle with pecan halves.

Bake for 45 to 50 minutes or until the center is set. If the crust or pie appears to be getting too brown, cover with foil for the remaining baking time.

Cool on a wire rack.

TIP: The original recipe stated that the pie should be baked 45 to 50 minutes in a preheated 350-degree gas oven. If an electric oven is used, it may be necessary to add 15 to 20 minutes to the baking time. (Begin testing the pie with a toothpick after 45 minutes.)
