Introduction

My mother-in-law made this for a family gathering, and I can't stop craving it! So delicious, and not too bad for ya, either. My mother-in-law made this for a family gathering, and I can't stop craving it! So delicious, and not too bad for ya, either.
Number of Servings: 10

Ingredients

    1/3 cup white vinegar
    1/3 cup white sugar
    1/3 cup canola oil
    1 can white corn (shoepeg, if you can find it), or yellow sweet corn will work
    1 can black beans
    6 oz feta cheese, crumbled (give or take)
    3-4 scallions, chopped (green part only)

Directions

1. Mix vinegar, sugar and oil until the sugar dissolves
2. Rinse corn and black beans with cold water, then drain
3. Add corn and beans to dressing mixture, then add scallions and feta cheese
4. Toss until everything is well mixed and coated
5. (Recommended) Cover and refrigerate 4-6 hours or overnight
6. Serve with Tostitos scoops or any other chips or crackers of choice

Note: You can serve this right away, but refrigerating for a few hours helps the flavors to really come out.
