Ingredients

    2 tbsp. vegetable oil
    1 medium onion, chopped
    1 small red bell pepper
    seeded and chopped
    1 clove garlic, minced2tsp. chili powder
    2lbs. boneless, skinless chickenbreast, cubed
    1 14 oz. diced green chilies drained
    salt and pepper
    1 15oz. can medium red enchilada sauce
    4 cups crumbled cornbread
    1 1/2 cups shredded cheddar cheese

Directions

1. Prheat oven to 350 degrees. Mist a 9 X13 baking dish with cooking spray.

2. In a large skillet, warm oil over medium heat. Add oinion and red pepper; saute until oinion is translucent, about 4 minutes. Add garlic and saute for 1 minute.

3. Add chicken and chilies; season with salt and pepper. Raise heat to high. Saute until chicken is cooked through, about 5 minutes. Pour in enchilada sauce. Bring to a boil. Spoon mixture into baking dish.

4. Spinkle 1/2 cup of cheese over mixture. Sprinkle cornbread crumbs evenly over mixture. Sprinkle the remaining cheese over the cornbread mixture. Bake until top is golden brown, about 30 minutes.
