Number of Servings: 12


    Crusty loaf of french or italian bread
    6 Ripe Roma tomatoes
    Fresh basil leaves (approximately 2 leaves for each tomato)
    Good olive oil, approximately 5 T.
    Fresh garlic, approximately 6 cloves
    Kosher salt


Bring pot of water to a boil. And drop tomatoes in for about 45 seconds / 1 minute. Remove from water and peel off skin. Slice into eighths and remove all juice and seeds. Dice. Place in bowl and drizzle olive oil over. Snip with scissors generous amount of fresh basil over diced tomatoes. Sprinkle kosher salt over. (Note: salt must not be added until right before serving.) Toss.

Cut off 1 inch slices of french bread, brush one side with olive oil. Toast under low broiler until golden on both sides. Cut clove of fresh garlic and rub over one side of bread. Spoon tomatoes on top.
