Makes about 3 cupsFiber, Protein, and oh so yummy! You have had Guacamole before, but this is seriously some HOLY GUACAMOLE!
Takes Guacamole and adds a surprising twist (one that won't even be noticeable in taste!) Makes about 3 cups

Ingredients

3/4 cup shelled edamame
2 ripe avocados (peeled and pitted...save pit for putting in guacamole to keep from getting brown)
1-4 Tbsp Cilantro (chopped) - to your taste
1/4 cup diced sweet onion
3-4 cherry tomatoes (diced)
Juice of 2 limes
3 tablespoons water
Tabasco or other pepper sauce
Salt & Pepper
Directions
Makes about 12 1/4 cup servings

Avocado Pit
Salt & Pepper
Pepper Sauce (Tabasco)
Put remaining ingredients into food processor. Combine by pulsing until almost completely smooth. Add water as necessary for texture/consistency preference. add 1T or so Tabasco (1T or so) to taste. Add salt/pepper to taste
Put avocado pit in the center of serving bowl, place guacamole around the pit (the pit will keep the guacamole from turning brown too quickly). Garnish with diced cherry tomatoes (I like to put them on top of and around the avocado pit.
Serve with pita chips, crackers, veggies, or whatever floats your boat! ENJOY!
