Number of Servings: 6


    Fava Beans, 1.5 cup (15 oz. can) rinsed and drained
    Olive Oil, 1.5 T.
    Onion, 1 large, chopped
    Tomato, 1 large, chopped
    Garlic, 1 clove, minced
    Salt to taste
    Pepper to taste
    1 t. ground cumin
    Ground red pepper 1/8 t.
    Parsley, 1/4 c. chopped
    Lemon Juice, 3 T.


Saute the onion and tomato in olive oil until the onion is softened. Add garlic, continue sauteeing until the garlic is golden, then add the beans. Mash the beans with a fork and let them cook until heated through. Add salt, pepper, cumin, and red pepper, stir until blended. Remove from the heat and stir in the lemon juice. Sprinkle with parsley and serve.
Makes 6 servings, 1/4 cup each
