Number of Servings: 12


    6 chicken breasts (cut in half)
    1 large onion, thinly sliced
    2 - 4oz cans mushrooms
    1/2 cup olive oil
    3 cups chicken broth
    8 tbsp plain flour
    2 tbsp lenon juice
    4 tbsp balsamic vinegar
    2 tsp salt
    pepper to taste


cut chicken breasts in half lengthwise. preheat oven to 450 F. Add oil. onion, chicken, mushrooms (with juice) to large skillet and toss together. Bake 7 minutes, turn chicken and bake 7 minutes again.
Combine broth, flour, vinegar, lemon juice, salt and pepper and mix until no lumps are present. Pour over chicken and bake, covered for 25 minutes, checking once to stir veggies and uncover. Turn broiler on and broil chicken mixture for 5 minutes to brown.
