Introduction

These are wonderful. We discovered them at the Jordan Pond House at Acadia National Park in Maine. These are wonderful. We discovered them at the Jordan Pond House at Acadia National Park in Maine.
Number of Servings: 6

Ingredients

    4 large eggs
    2 c. whole milk
    2 c. flour
    1/2 t. salt
    2 pinches baking soda

Directions

Beat eggs on high until lemon colored, 3-4 minutes.

Add one cup milk and mix on medium for 2 minutes.

Sift together dry ingredients. Add slowly while mixing on low speed. Stop and scrape bowl.

Add remaining milk. Mix on medium speed for 2 minutes. Then mix on high for 5 minutes.

Pour into a well-greased muffin or popover pan.

Bake 15 minutes at 425 degrees. Reduce temperature to 350 degrees and bake 15-20 minutes.

Makes 6 large popovers.

  • I am from Yorkshire England. Your recipe was excellent but it made way too much for muffin pans to handle. You said it made 6 popovers it FILLED 12 muffin pans to the top.
    I never added Baking soda to the batter but it did make a difference. I make them weekly and I will buy their popover muffin pa
