    1 tsp olive oil
    10 oz fresh mushrooms slice
    2 1/2 cups fat free milk
    1 glove garlic smashed
    2 tsp minced fresh thyme
    1 bay leaf
    4 oz crumbled fresh goat cheese at room temp
    cannola oil spray
    8 laege egg whites, lightly beaten
    finely chopped fresh chives for garnish


saute mushrooms with the olive opil for 5 minutes, salt and pepper to taste.
save 12 nice mushroom slices and processs until very finely chopped.
place chopped mushrooms in medium skillet over medium heat and add the milkk, garkic, thyme and bay leaf and bring to a simmer. Stirr in the crumbled goat cheese until it melts, cover the pan and let rest off the heat for 1 hour.
remove the bay leaf and process again until pureed.
Heat oven to 350, spray 6 6oz ramekins with cannola oil
and place not touching in a baking pan. Divide the mixture among the ramekins place the baking dish on the middle rack of the oven and carefully pour hot water into the baking sidh halfway up the sides of the ramekins
baker about 28 minutes or until the custards ar3 very slightly puffed and set arpund the edges, Coll on wire rack for a minimun of 20 munites. Can vary the flavers using 3 cups orf cooked fresh or thawed frozen peas,with 4 shallots
and 2 oz of finely grated parmesan or Asiago cheeses.
