    2 teaspoons butter
    1 large graham cracker, crumbed
    2 8 oz. packages neufchatel cheese
    5 large eggs
    1/2 cup granulated sugar
    2 tablespoons vanilla extract
    1 tablespoon orange zest
    2/3 cup skim milk
    1/8 tsp salt
    1 cup low fat sour cream
    1 tablespoon granulated sugar
    1/2 teaspoon vanilla extract


Melt butter and spread in 8 " springform pan. Sprinkle crumbs in pan and shake to spread around. Quick brown in 450 degree overn 6 min. Mix filling ingredients together until smooth and pour into pan. Bake 1 hour in 250 degree oven. Mix topping ingredients together and spread over cheesecake and pop back in oven for 10 minutes. Cool. Cut into 12 pieces. Serve plain or with fruit topping of choice.
