Ingredients

    4 medium zucchinis
    1.5 medium onions
    150g bacon (fat removed)
    75g low fat hard cheese (I used tasty)
    1 C self raising flour (can use wholemeal)
    4 large eggs
    1/3 C oil (dont use olive oil as the flavour is to strong, instead opt for a vegetable or peanut oil)

Directions

dice onion and bacon and cook in a pan. line a baking dish. grate zucchini and drain off excess liquid (prevents the slice from being to runny, can be used in soup) combine zucchini onion and bacon mix cheese flour and salt and pepper to taste (add any herbs and spices at this stage, i added a small amount of chilli) use a fork to mix the eggs and oil together. combine all ingredients. pour into baking dish. bake for 45 min at 180 degrees celcius should be firm to the touch when ready and golden brown

1 made 30 serves but u an make them as big or as little as u went
