    Vegetable oil cooking spray
    3/4 cup All-Bran cereal
    1 cup skim milk
    2/3 cup whole wheat flour
    1/3 cup sugar (or sugar substitute)
    2 tsp baking powder
    1/2 tsp baking soda
    1/4 tsp salt
    1 tsp ground allspice
    1/2 tsp cloves
    1 1/2 cups oat bran
    2/3 cup raisins
    2 large apples, peeled and cut into 1/4" cubes
    1 egg, lightly beaten
    2 tsp vegetable oil
    1/2 cup applesauce, unsweetened


1. Preheat oven to 350 F. Spray 12 cup muffin tin with vegetable oil cooking spray.

2. Mix the cereal and skim milk on a bowl and let stand for a few minutes.

3. In a large bowl, mix the flour, sugar, baking powder, baking soda, salt, allspice and cloves. Stir in the oat bran raisins and apple.

4. In a small bowl, combine the egg, oil and applesauce. Stir the egg mixture and bran mixture in with the dry ingredients.

5. Spoon the mixture into the muffin tins and bake for about 20 minutes, until brown.

    For a sugar free high fiber muffin, this is pretty good.
    I made this recipe twice. The first time, it tasted too strongly of cloves. The second time I made the recipe, I substituted cinnamon for the cloves since allspice already contains cloves. This tasted so much better.
