Introduction

Yummy cold salad that goes well with barbecue, or any hot summer day meal. Would be a great lunch on it's own, too. Yummy cold salad that goes well with barbecue, or any hot summer day meal. Would be a great lunch on it's own, too.
Number of Servings: 4

Ingredients

    1 cup, dry Quinoa
    1/2 cup green beans, fresh and snapped
    2 small carrots, washed and sliced thinly
    1/2 red bell pepper, sliced
    1 medium ripe tomato, diced
    1/4 cup green onions, chopped
    1/5 cup fresh parsley, chopped

    Dressing:

    1/4 cup Olive Oil
    1/2 of large lemon, juiced
    Salt and Freshly gound black pepper to taste

Directions

Make quinoa according to package directions. Chill.

Steam green beans, carrots and bell pepper for about 5 minutes. Add to chilled quinoa, along with tomato, green onion and parsley.

Whisk together olive oil, lemon juice and salt and pepper. Carefully blend all ingredients. Squeeze other half of lemon over salad and chill completely before serving. Makes 4 servings.
