    1lb ground turkey (93% lean)
    8oz part-skim mozzarella cheese
    15oz part-skim ricotta cheese
    1c low-fat (2% or lower) cottage cheese
    1/2 10oz pkg frozen spinach
    3 cups spaghetti sauce
    6oz (about 6 noodles) OVEN READY lasagna noodles


1. Preheat oven to 450 degrees.

2. Brown ground turkey; season with salt and pepper as desired. Remove from heat. Drain fat.

3. Stir spaghetti sauce into browned ground turkey.

4. In large bowl, mix together ricotta cheese, cottage cheese, mozzarella cheese (hold back about 1/2c mozzarella) and frozen spinach.

5. Spray bottom of 9x13" pan with non-stick spray. Pour about 1/3 of the meat/sauce mixture on bottom of pan.

6. Layer 3 lasagna noodles lengthwise on top of meat/sauce; spread 1/2 of the cheese/spinach mixture on top of noodles.

7. Pour another 1/3 of meat/sauce on top of cheese/spinach; add 3 more noodles; spread remaining cheese/spinach mixture on top of noodles and pour remaining meat/sauce on top of cheese. Sprinkle with remaining mozzarella cheese.

8. Bake in 425 degree oven for 60 minutes. Allow to cool 5-10 minutes, then cut into squares. Serves 12.
