    * Sweet potato, 1 cup, cubes
    * Carrots, raw, 2 cup, chopped
    * *Extra Light Olive Oil, 2 tbsp
    * *Dried Oregano, 1 tsp
    * Garlic, 2 clove
    * Onions, raw, 1 cup, chopped
    * Split Peas, 1.5 cup
    * Pacific Natural Foods Natural Free Range Chicken Broth,8 cups
    * Sherry, dry, 1 fl. oz
    * About half of a lemon


Makes 12 servings

(1) Saute the oregano, garlic, onions in the olive oil. (Salt and pepper to taste.
(2) Add the carrots and the potatoes and saute for 10 minutes.
(3) Add a little of the stock and let it cook down so that the veggies get brown. Squeeze the lemon juice in at this point.
(4) Add the sherry. Cook down a bit.
(5) Add ONE HALF of the split peas.
(6) Add the chicken stock (or plain water). Cook for 40 minutes.
(7) Add the rest of the SPLIT PEAS and cook for another 40 minutes. If you like it a bit creamier, use a hand blender to blend about half of the soup.
(8) Serve hot. Top with sour cream for a little added zip!
