Number of Servings: 6


    2 tsp olive oil
    2 cloves garlic
    1 cup chopped onions
    2 cups sliced mushrooms
    1 can chopped tomatoes (drain and reserve liquid)
    1 Tbl cornstarch
    1 tsp basil
    1 tsp oregano
    2 cans black or great northern beans, rinsed & drained
    10 olives, chopped


Heat oil, saute onion & garlic 5 minutes. Add mushrooms cook 5 more minutes. Add tomatoes. Put tomato liquid in small bowl; add cornstarch and whisk then add to skillet. Add basil, oregano, beans and olives and cook for 2-3 minutes. Pour into 7x11 casserole. Cover & bake for 40 minutes.

Makes about six servings of 3/4 cups
