Trust me on these! Trust me on these!
Number of Servings: 1

    1/2 Cup Quaker Oats
    1/2 Cup 1% Cottage Cheese
    2 Egg Whites
    Splenda (to taste)
    Cinnamon (to taste)

Optional Add In's (these will change the nutritional value)
1/4 Cup of Libby's Canned Pumpkin
    1 Small Banana
    1/4 Cup of Fresh Blueberries

Combine all ingredients in a food processor or blender. This will become a "batter". You may have to add more oats or more cottage cheese, depending on the consistancy of the batter (you don't want it too thin or too thick).
Cook on hot skillet until light brown. Serve with Smuckers Sugar-Free Syrup or just top with fresh berries!
As mentioned you can make these pumpkin pancakes, banana pancakes, etc...the great thing is you can personalize this recipe!

  • I love these pancakes. Most time I use light tofu instead of cottage cheese for more protein and less calories. I like to top with applesauce too. EASY to make and a great way to get your fruit, grain and protein in one meal. - 4/15/09

  • Great recipe. I added an x-tra egg white and a little protein powder for a little x-tra protein and a little vanilla extract for a little more flavor. Yummy! - 3/8/09

  • They were delicious--so much better than any of the mixes that I have tried. I only used a 1/3 cup of ea. of the cot. chz and oatmeal and a whole egg and then I topped them with mixed berries. Thank you! - 2/2/09

  • These taste pretty good. I topped with Splenda and cinnamon. I cooked them at a lower temp to make sure they got done in the middle without browning too much. They took a while to make, but were very good. About 2/3 of the recipe was very filling. - 1/31/09

  • Yummy and healthy alternative to regular pancakes! I blended the oats into a flour and added everything else and it came out with just the right consistency. Add frozen blueberries while the first side is cooking and you have yummy, moist pancakes that don't need any syrup! - 8/31/08

  • These were good, but make sure that you flatten them out when you cook or they will be too wet inside, and cook them low. - 1/30/08
