    3 c. water
    1 c. quick-cooking grits
    1/2 c. fat free cheddar cheese
    1/4 tsp salt (optional)


Makes 4 1/2-cup servings

Bring water to boil. Slowly add grits, stirring constantly. Lower heat to medium-low. Stir grits frequently, making sure to remove all lumps. Cook 5-6 minutes or until thick. Remove from heat, stir in cheese and salt.
