    Olive Oil, 1 tbsp
    Garlic, 2 cloves crushed
    Dried Shitake Mushroom, 3 caps, soaked and chopped
    Chicken Breast, 1, no skin, bone cut into thin strips
    Sherry, dry, 1 tsp
    Light Soy Sauce, 1 tbsp
    Dark Soy Sauce, 1 tsp
    Five Spice, few pinches
    Tinned Bamboo shoots, 100 grams, drained and cut into strips
    Cucumber , 1 small, peeled and sliced lengthways using a potato peeler, and deseeded


Heat wok over high heat. Add the oil. Add the garlic and mushrooms and stir fry for few seconds.

Add chicken strips and as it begins to cook, add the sherry and stir fry for 1 minute.

Season with the light and dark soy sauce and five spice powder and stir well.

Add the bamboo shoots and cucumber slices and stir well.
