    2 large eggs beaten
    2 tbsp skim milk
    1/2 tbsp light butter
    2 tbsp salsa
    5 cherry tomatoes sliced in half
    2 tbsp canned jalapeņos
    1/4 cup part skim shredded mozzarella
    1/2 tbsp grated Parmesan cheese
    Freshly cracked pepper to taste


1. Beat the eggs in a separate bowl or cup and add milk.
2. Heat small skillet on medium. Add butter and coat the pan.
3. When the butter is completely melted and bubbly, add the egg/milk mixture. Cover with lid.
4. Let cook for about 2-3 minutes, until the top layer looks wet but is no longer runny.
5. Add tomatoes, jalapeņos, mozzarella and Parmesan to one half of the omelet and cover.
6. Let cook for another 30 seconds to a minute. Lift the half that doesn't have toppings and fold over the toppings.
7. Recover and let cook for one more minute to let cheese melt.
8. Transfer to a plate and top with salsa and salt/pepper to taste.
