    200g (7oz) Aubergines/EggPlant, thinly sliced
    50g (1 3/4oz) tomatoes, finely chopped
    1 tablespoon mixed herbs
    Curry powder to taste
    50g (1 3/4oz) red pepper, thinly sliced


Serves 2

Simmer the tomatoes in a non-stick pan over a gentle heat until cooked. Season with salt and pepper, add the herbs and spices.

Blanch the aubergines and red pepper for a few minutes then leave to cool.
Place a layer of cooked aubergines then a layer of peppers in an ovenproof dish.
Pour the tomato sauce over the top.
Bake in the oven for 10 minutes at 220c/425f/Gas 7.

Serves two.
