I love chicken fingers, so I decided to make my own (healthy ones) It may sound a little odd at first, but the outcome is crunchy, moist, flavorful, and tasty chicken. I love chicken fingers, so I decided to make my own (healthy ones) It may sound a little odd at first, but the outcome is crunchy, moist, flavorful, and tasty chicken.
Number of Servings: 4

Ingredients

    - 4 Chicken breast (skinless and boneless. I like thin-cut the best)
    - 1/2 c egg substitute
    - 8 Tbs ground flax seed
    - seasoning blend (like Mrs. Dash or McCormicks)

Directions

Preheat oven to 375, and line a baking sheet with foil
Pour eggbeaters into a shallow dish
Mix flax seed with seasoning blend in a different dish
Cut/trim chicken
Dip chicken into the eggbeaters, and then into the flax and coat the chicken
Place on baking sheet and bake for 20-25 min (or until golden brown)
Enjoy!
