This is cripy baked tofu in a cajun type breading. This is cripy baked tofu in a cajun type breading.
Number of Servings: 4


    1oz Sweet Potato Tortilla Chips (ground up)
    1tsp Salt Substitute
    1tsp Paprika
    1/2tps Cayenne
    1tsp Ground Thyme
    1tsp Ground Oregano
    1tsp Ground White Pepper
    1tsp Ground Black Pepper
    1tsp Onion Powder
    1tsp Garlic Powder
    1 Block Tofu (Etra Firm frozen & drained)
    Pam Olive Oil Cooking Spray


Process Sweet Potato chips in food processor until fine (about the size of bread crumbs, which these are replacing).
Add spices and mix and spread out on plate.
I took the tofu and sliced it into 1/4" thick slices when draining, so just took them and sprayed with Pam and coated in breading and put on sprayed parchment sheet in 350 oven for 20 minutes (turning halfway).
Depending on how you slice it, it makes 6 to 8 pieces. 2 pieces to serving.
