Tasty south of the border meal. Tasty south of the border meal.
Number of Servings: 6


    3/4 c Chicken Broth
    1/2 c green or red salsa
    1/3 c flour
    1 large onion chopped
    1 1/2 lb boneless, skinless chicken breast
    2/3 c reduced fat sour cream
    4 oz. reduced fat cheddar or Monterey Jack chese
    1 (15 oz) Can Red Beans
    2 C shredde4d Iceberg Lettuce
    6 flour tortillas warmed


Combine broth, flour and salsa in slow cooker, whisk to blend. Stir in onion then arrange chicken on top. Cover and cook 6 hours on low.
Remove chicken to plate. Ladle sauce from pot to blender and puree. Stir in sour cream. Return sauce and chicken to pot. Warm a few minutes on low.
Arrange chicken on ploates and top with cheddar cheese. Serve with beans , additional salsa, and tortillas. Serves 6
