    1 lb. fresh asparagus
    1/4 c. chopped onion (red or vidallia)
    1 can hearts of palm, drained and rinsed
    1 cup grape tomatoes, sliced in halves
    fresh italian parsley, chopped
    shredded parmesan cheese
    1/4 c. red wine vinegar
    1/2 tsp. lemon juice
    1/2 tsp dried oregano
    1/3 cup olive oil


Cut asparagus into 2 inch pieces. Steam until al dente. Remove from heat and immediately place asparagus in ice water to stop the cooking process. Place in large bowl.
Drain and rinse hearts of palm, and add to asparagus along with onion, tomatoes, parsley. Salt and pepper to taste.
In separate bowl combine red wine vinegar, lemon juice, oregano. While constantly whisking, add olive oil in small stream until emulsified. Salt and pepper to taste. Add the dressing to the salad and thoroughly combine. Place in serving dish and sprinkle with cheese.
Serves 3.
