    1/2 Tbsp. extra virgin olive oil
    12 oz. lean ground beef
    3 medium onions, chopped
    1.25 lbs red potatoes, diced
    1 cup sliced button mushrooms
    1 cup water
    2 tsp very low sodium beef bouillon granules
    1 tsp oregano
    1 tsp pepper
    1/4 teaspoon salt
    1/2 cup crumbled blue Cheese
    1/2 cup fresh parsley, chopped


Heat a large skillet over medium-high. Brown the beef, then transfer beef to a plate lined with a paper towel to drain fat. Set aside.

Heat oil in the skillet and cook the onions 3-4 minutes or until translucent, stirring occasionally. Add in the potatoes, mushrooms, water, beef bouillon, oregano, and pepper. Increase heat to high and bring to a boil. Reduce heat and simmer, uncovered, for 10 minutes, or until potatoes are tender. Remove from the heat.

Stir in the beef and remaining ingredients. Let stand 5 minutes to absorb flavors.

Makes 4 1.5-cup servings.
