Ingredients

    3 eggs
    1/3 cup milk
    1 bunch asparagus, trimmed and chopped
    280 grams broccoli florets
    1 cup chopped mushrooms
    1/4 cup chopped onion
    2 oz chipotle cheddar cheese

Directions

Preheat oven to 350.

Blanch asparagus and broccoli in boiling water, 1-2 minutes, then shock in ice water.

Saute onions and mushrooms in pan coated with cooking spray, 8 minutes or until mushrooms are tender.

Mix eggs, milk, dash of nutmeg and dash of pepper in large bowl. Add vegetables and mix.

Pour into large casserole that has been sprayed with cooking spray. Top with cheese. Bake for 20 to 25 minutes. or until golden.
