Introduction

Not to be enjoyed liberally but as a snack 1 muffin is perfect. I usually make these muffins and keep 5 and give the rest away. Ingredients

    *Flour, white, 4 cup
    Granulated Sugar, 2 cup
    *Buttermilk, 1 cup
    Baking Soda, 2 tsp
    Baking Powder, 2 tsp
    Nutmeg, ground, 1.5 tbsp
    Salt, 1 tsp
    Butter, unsalted, 6 tbsp
    Vanilla Extract, 1 tsp
    Egg, fresh, 6 large
    Banana, fresh, 4 medium
    Pecans, 1 cup, chopped

Directions

cream the butter and sugar
add the eggs and mix until smooth
add vanilla
in a seperate bowl add all dry ingredients
in another bowl mash the banannas
slowely incorporate the dry ingredients with the butter mixture.
Add the bananas and buttermilk
mix on low until combined
Mix in Pecans
Makes 48 regular muffins
