Introduction

Number of Servings: 6

Ingredients

    5 chicken breasts (4 oz each)
    1 can cream of mushroom soup
    1/2 package reduced sodium taco seasoning
    2 cups salsa
    1 can black beans
    1 can corn (Mexicorn included in nutrition info)
    4 tbsp light sour cream
    Brown Rice (not included in nutrition info)

Directions

Place chicken, taco seasoning, salsa and soup in slow cooker. Cook on low 4-5 hours. Remove chicken and shred with fork. Put back in slow cooker. Add beans and corn. Continue cooking for 3-4 hours. Before serving add sour cream. Serve over brown rice (not included in nutrition info). Makes at least 6 bowls when mixed with rice.
