    Pearled Barley (raw), 2 Cups
    Maple Syrup, 1 Cup
    Milk, nonfat, 10 Cups
    Salt, 1 tsp
    Vanilla Extract, 1 tsp
    Cinnamon, 1 tsp
    Cardamom, 1/8 tsp
    Dash of nutmeg


Rinse pearled barley in a strainer. Drain well and place in a large pot with 10 cups milk, sweetening, vanilla, and spices. Bring to a boil, cover, and lower heat as much as possible. Simmer until the barley is very tender and creamy. This will take up to 1 1/2 hrs.
Sprinkle a little cinnamon and/or nutmeg on top before serving as a finishing touch. Serve at room temperature or cold.
