Ingredients

    box of pasta
    1 onion diced
    1/2 eggplant peeled and cut up
    1 package button mushrooms sliced
    1 tbs minced garlic
    Artichoke hearts in oil about 2 cups cut up
    about 2 cups sundried tomatoes in oil cut up
    1 red pepper cut up
    1/2 to 1 cup roasted garlic

Directions

sautee onion, garlic, mushrooms, pepper and eggplant in a bit of oil
Cook pasta according to directions
drain pasta, mix all ingredients into pasta and serve
can be eaten warm or chilled
