    soak 4 cups of steel cut oats in 4 cups of low fat buttermilk overnight or longer
    stir in 4 eggs
    2 cups of unsweetened applesauce
    1 cup of brown sugar
    1 cup splenda
    mix your dry ingredients
    3 cups of whole wheat flour
    1 cup of ground flax seed
    4 t of baking powder
    2 t of baking soda
    2 t salt
    4 T cinnamon

    lightly blend with wet ingredients stir in toasted walnuts and craisens bake in 400 degree oven about 10 minutes give or take a few....should spring back when touched.

    you may substitute pumpkin for applesauce and pumpkin pie spice for cinnamon
    48 muffins
    freeze leftovers for quick breakfasts or snacks
