    1 pound frozen shrimp, uncooked
    4 tablespoons olive oil, divided
    2 cups sliced mushrooms
    1 medium onion, coarsely chopped
    1/2 cup shredded carrot
    1 cup snow peas, cut in half
    1 can Healthy Request Cream of Mushroom Soup
    1 soup can nonfat milk
    1 tablespoon Teriyaki sauce


Prepare all ingredients before beginning to cook. Rinse frozen shrimp in colander. Mix 1 can cream of mushroom soup with 1 can nonfat milk and the tablespoon of Teriyaki sauce and set aside. Heat 2 tablespoons olive oil in deep skillet. Add mushrooms and saute until softened. Add chopped onions and saute until beginning to soften. Add shredded carrot and snow peas and saute until crisp tender - 1 to 2 minutes. Empty contents of skillet into serving bowl and keep warm. Add remaining 2 tablespoons olive oil to skillet. When hot, add frozen shrimp and stir fry until pink and cooked through. Return contents of bowl to skillet. Add sauce and heat through. Serve with brown or white rice or noodles.
