    1/2 cup non-hydrogenated margarine (ie Becel)
    1/3 cup Splenda
    1/3 cup honey
    1 cup all-purpose flour
    1.5 cups whole wheat flour
    1/2 tsp baking soda
    1 tbsp cinnamon
    1/2 tsp almond extract ***

    ***recipe called for sliced almonds to be put on top of the cookies right before baking. I opted for the almond extract instead.


1) Beat margarine until light and creamy. Beat in sugar until fluffy. Beat in honey. Add extract.
2) Combine the flour, baking soda and cinnamon. Stir into butter mixture. Mix until smooth.
3) Shape into a roll, 1.5-2 inches in diameter. Wrap in plastic wrap and freeze for 30 minutes or overnight.
4) Slice into 1/4 inch rounds. Place on greased cookie sheet.
5) ***OPTIONAL*** Press almonds onto tops of cookies
6)Bake at 350F for 13-15 minutes.
7) Remove to rack to cool. Cookies crisp as they coo. Store in a tin.

Makes 3 dozen cookies
