    -One 20oz. package of Jennie-O Italian Seasoned Ground Turkey
    -One medium yellow onion
    -2 tbsp Country Crock plus Calcium spread
    -1 cup medium grain cooked white rice
    -2.5 cups of Hunts Tomato Sauce
    -4 tbsp chopped cilantro
    -6 medium green bell peppers


1. Pre-cook white rice; set aside.
2. Boil peppers for 15 minutes; set aside.
3. Cook the ground turkey until done; remove from pan.
4. Chop yellow onion and saute in 2tbsp butter.
5. In a large bowl, combine turkey, rice, and onion.
6. Add 1 cup of tomato sauce to turkey mixture.
7. Add cilantro to mixture; mix well.
8. Stuff each pepper evenly with turkey mixture; add peppers to large casserole pan.
9. Pour 1/4 cup tomato sauce over each pepper, letting it drain over the sides.
10. Cover peppers with foil and bake at 375 degrees for 30 minutes, or longer depending on how hot you like them.

*Makes 6 servings of one pepper each*

  • We opted not to boil the peppers prior to baking. We replaced the onion with canned corn. Sprinkled with some shredded cheddar cheese. - 8/31/11
