Mellow creamy dressing Mellow creamy dressing

Ingredients

    2 heads garlic
    1/2 cup reduced-sodium chicken broth
    1/4 cup wine or cider vinegar
    2 Tbsp EVOO
    2 tsp Dijon Mustard
    Salt & Pepper to taste

Directions

Preheat oven to 400 degrees F. clean off excess paper from heads of garlic without separating cloves. Slice 1/2 inch off top of each head and wrap in aluminum foil separately. Roast for 40 minutes or until very soft. Unwrap garlic and cool slightly and peel cloves. Combine garlic, broth, vinegar, oil, mustard, S&P in food processor or blender and blend until smooth
