    8 stalks fresh asparagus
    2 T extra-virgin olive oil
    1 clove garlic, crushed
    2 t. white wine vinegar


Bring water to boil in a shallow pan or skillet. Wash and trim ends from asparagus. Place asparagus in boiling water until they turn bright green. Remove promptly and submerge in cold water to stop the cooking process. Chill. Mix the olive olive oil, garlic and vinegar. It is best done ahead and left to sit for several hours to allow garlic to flavor the oil and vinegar). Before serving, pour the vinegar and oil over the chilled asparagus.
