Introduction
Another great use-up recipe - I had a bucketful of applesauce, an errant banana, and a couple apples past their prime, so what better use for them all than muffins? I tossed in some ground almonds, bran and oatmeal for good measure too. Ingredients

1 cup soy or rice milk
1/4 cup vanilla soy yogurt
1 over-ripe banana, mashed well
1 tsp. lemon juice
2 cups unsweetened, thick applesauce
3 tbsp. canola oil
3 tbsp. maple syrup
1/2 cup brown sugar
1/3 cup sugar
2 cups whole wheat flour
1 cup AP flour
1/2 cup wheat bran
1/2 cup rolled oats
1/2 cup ground almonds
4 tsp. baking powder
1 tsp. baking soda
1/2 tbsp. cinnamon
1 tsp. nutmeg
1/2 tsp. salt
2 medium apples, diced
Directions
Preheat oven to 350 F, and grease 24 regular or 12 jumbo muffin cups (or 12 muffin cups and 1 loaf pan).
Mix soy milk, soy yogurt, banana and lemon juice.
Add applesauce, canola oil, maple syrup and sugars.
Mix dry ingredients in a separate bowl, and add to the wet mixture.
Mix until just combined.
Bake standard muffins for 20 minutes, jumbos 35 minutes and a loaf 45 minutes (will test clean).
