Ingredients

    2 tomatoes finely diced
    2 onions finely diced
    4 tbsp cilantro leaves and stems finely minced
    2 tbsp lime juice, fresh or bottled
    6 jalapenos finely diced
    salt

Directions

Finely dice (or use food processor) tomatoes, onions, jalapenos and cilantro. Add more or less to suit your tastes. Add lime juice and salt. Add more or less to taste. Refrigerate for several hours before use. Makes 12 1/4 cup servings.
