Delicious cubes of tofu stir-fried with scallions and ginger. Vegetarian, low cal, low carb and full of asian flavors! Delicious cubes of tofu stir-fried with scallions and ginger. Vegetarian, low cal, low carb and full of asian flavors!

    * Tofu, firm, 1 block (remove)
    * Scallions, raw, 6 large
    * Mushrooms, cooked, 1 cup pieces
    * Peppers, sweet, red, raw, sliced, 1 cup
    * Jalapeno Peppers, .5 pepper
    * Soy Sauce, 2 tbsp
    * Chicken Broth, 1 fl oz
    * Canola Oil, 2 tbsp
    * Ginger, ground, 1 tbsp
    * Garlic, 2 tsp


Remove tofu from package and drain, wrap in paper towels and place something heavy on top to drain out liquid. Let sit 10 minutes.

In the meantime, slice scallions into 2 inch pieces, set green tops aside (about 1/2 cup worth). Slice peppers, mushrooms and jalapeno. Finally, unwrap tofu and slice into 1x1" cubes.

In wok or heavy pan, heat on high and preheat until it feels hot when you hold your hand above it. Add oil and heat until shimmering. Then add garlic, ginger and jalapeno, cook about 10 seconds, and quickly add tofu cubes and white pieces of green onion. Cook, stirring occasionally, until the tofu is browned to your liking (usually about 7-10 minutes). Add in peppers and mushrooms (and any additional veggies you wish). Stir-fry another 2 minutes, add green parts of scallions and cook 30 seconds. Add broth, stir and cook until almost evaporated, 2-3 minutes. Add soy sauce and stir to distribute. Serve hot.

Pour over rice or noodles, or to keep it low carb and cram in those veggies, pour over baby spinach leaves and stir until leaves have wilted.

**The half jalapeno is VERY mild in this recipe. Add more or less to your liking, or try it with a tsp (or more) of spicy asian garlic-chili paste...yum!!
